Learn how to prepare ceviche from Leamington pub chef

Sustainably-sourced fish and seafood was the theme of an interactive evening at Leamington pub, the Star and Garter, on Tuesday.

Head chef Tom Lilley talked participants through how Peach Pubs, which owns the pub in Warwick Street, sources its fish and seafood using the Marine Stewardship Council as a guide for choosing products which will pose a threat to the world’s supply.

He then showed them how to prepare sea bass ceviche, soused mackerel, crab cakes and trout en papillote, before serving up the dishes for participants to try.
